Bran Muffins with Coffee


  • 2 eggs
  • ¾ cup white sugar
  • 1/3 cup butter, melted
  • 1 cup brewed coffee
  • 2 tablespoons buttermilk
  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking soda
  • + 1 more ingredients
    • 3 cups whole bran cereal

1. In a large bowl, mix together the eggs, white sugar and butter until smooth. Stir in the buttermilk and coffee. The mixture will look curdled.
