Ingredients

  • ¾ cup all-purpose flour
  • ¼ cup finely chopped pecans, toasted
  • Cooking spray
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cinnamon

    • ½ cup whole wheat pastry flour
    • 1 large egg yolk, lightly beaten
    • 3 tablespoons Calvados (apple brandy)
    • Filling:
    • 3 pounds Granny Smith apples, peeled and cut into 1/2-inch slices (about 8 apples)
    • 1 ½ tablespoons butter, divided
    • 2 teaspoons cornstarch
    • 3 tablespoons honey
    • ½ teaspoon salt
    • 2 tablespoons walnut or canola oil
    • 2 tablespoons half-and-half
    • ½ cup Calvados (apple brandy)
    • Topping:
    • ½ teaspoon ground allspice
    • 3 tablespoons Calvados (apple brandy)

Preheat oven to 375°. To prepare filling, melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add apples; sauté 8 minutes or until crisp-tender.
