Brie Toasts with Eggplant Marmalade

Ingredients

  • 1/8 teaspoon salt
  • 1 teaspoon brown sugar
  • 4 ounces Brie cheese, cut into 8 slices
  • 6 cups finely chopped eggplant (about 12 ounces)
  • 1 (14 1/2-ounce) can vegetable broth
  • 8 (1 1/2-ounce) slices diagonally cut multigrain bread
  • 3 tablespoons red wine vinegar
  • + 4 more ingredients
    • 1 garlic clove, minced
    • 1 ½ tablespoons sugar
    • 2 tablespoons chopped fresh parsley
    • ¼ teaspoon freshly ground black pepper

Combine first 7 ingredients in a medium saucepan over medium-high heat. Bring to a boil. Reduce heat to low; simmer 30 minutes or until thick, stirring occasionally. Remove from heat; stir in garlic.
