Ingredients

  • Vegetable cooking spray
  • 1 cup cooked long-grain rice
  • 1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese
  • 2 (10-ounce) packages frozen chopped broccoli, thawed
  • ½ cup drained canned sliced mushrooms
  • 4 teaspoons reduced-calorie margarine
  • ¼ cup skim milk
  • + 2 more ingredients
    • ½ cup diced onion
    • ¼ teaspoon salt

Combine the first 7 ingredients in a medium saucepan; cook over low heat 4 minutes or until cheese melts, stirring constantly.
