Broccoli White Cheddar Soup

  • 2 cups sharp white cheddar cheese, shredded, plus extra for garnish
  • 1 and ½ cups broccoli florets
  • ¾ cup milk (I used skim)
  • 2 and ½ cups chicken, turkey, or vegetable stock
  • 3 Tbsp. All-purpose flour
  • salt and pepper to taste
  • + 3 more ingredients
    • 2 cloves garlic, roughly chopped
    • 1/3 of a large yellow onion, roughly chopped
    • 3 Tbsp. Extra Virgin Olive Oil
