Ingredients

  • 1 small tomato
  • 1 6-oz piece arctic char fillet
  • ¼ teaspoon minced garlic
  • ½ cup fresh basil leaves
  • 3 ½ tablespoons extra-virgin olive oil
  • ¼ teaspoon light brown sugar
  • fresh-cut lemon
  • + 2 more ingredients
    • 1 teaspoon red-wine vinegar
    • 1/8 teaspoon salt

Blanch basil in a 1-quart saucepan of boiling water 15 seconds, then transfer with a slotted spoon to a bowl of ice and cold water to stop cooking.
