  • 2 Tbs. extra-virgin olive oil
  • ¼ cup walnuts, toasted and finely chopped
  • Kosher salt
  • Freshly ground black pepper
  • ½ small yellow onion, finely diced
  • 2 Tbs. finely chopped fresh flat-leaf parsley
  • ½ cup brown rice
