Brown Rice with Walnuts and Golden Raisins
Ingredients
- Kosher salt
- 2 Tbs. finely chopped fresh flat-leaf parsley
- ¼ cup walnuts, toasted and finely chopped
- 2 Tbs. extra-virgin olive oil
- ½ cup brown rice
- ½ small yellow onion, finely diced
- Freshly ground black pepper

Heat the oil in a 2-quart saucepan over medium heat. Add the onion and cook, stirring frequently, until softened, 2 minutes. Add the rice and stir to coat in the oil.
