Ingredients

  • 11-¼ oz. (2-½ cups) unbleached all-purpose flour
  • ½ tsp. table salt
  • 6 oz. (¾ cup) unsalted butter, softened
  • 1 tsp. ground ginger
  • 1 tsp. ground nutmeg
  • ¼ tsp. baking soda
  • 1-½ cups very firmly packed, very fresh dark brown sugar
  • + 9 more ingredients
    • ¼ tsp. ground allspice
    • 8 oz. (2 cups) coarsely chopped toasted walnuts
    • 2 tsp. ground cinnamon
    • 1 tsp. pure vanilla extract
    • 1 large egg
    • 1 egg white
    • ¼ tsp. ground black pepper
    • 2 Tbs. molasses
    • 1 large egg yolk

Sift together the flour, cinnaamon, ginger, nutmeg, salt, baking soda, allspice, and pepper.
