Ingredients

  • 1 cup peeled, grated carrots (about 2 to 3 medium), grated on the large holes of a box grater
  • 2 tablespoons unsalted butter (¼ stick), cut into 4 pieces
  • Freshly ground black pepper
  • Kosher salt
  • 1 pound Brussels sprouts, bottoms trimmed and cut in half through the core
  • 4 ounces thick-cut smoked bacon, cut crosswise into ¼-inch pieces
  • 1 cup "Napa Cabbage Kimchi":/recipes/29505

Heat the oven to 400°F and arrange a rack in the middle. Place the kimchi in the bowl of a food processor fitted with a blade attachment and process until puréed (the mixture will not be smooth), stopping often and scraping down the sides of the bowl with a rubber spatula, about 3 to 4 minutes....
