Brussels Sprouts with Shallots and Wild Mushrooms

Ingredients

  • ½ cup water
  • 1 ¼ pounds mixed fresh wild mushrooms such as chanterelle and oyster
  • ½ pound large shallots
  • 3 pounds Brussels sprouts
  • 1 deep-fat thermometer
  • ¼ teaspoon black pepper
  • 1 teaspoon salt
  • + 7 more ingredients
    • ¼ cup olive oil
    • ½ teaspoon salt
    • 1 tablespoon fresh thyme
    • 1 cup vegetable oil
    • ¼ cup dry white wine
    • ½ tablespoon minced garlic
    • 6 tablespoons unsalted butter
