Buffalo Meat Loaf

Ingredients

  • 1/3 cup water
  • 6 plum tomatoes, each cut into 6 wedges
  • 6 shallots, cut into 1/3-inch wedges
  • 1 ¾ lb ground buffalo
  • ¼ teaspoon freshly ground black pepper
  • 2 teaspoons salt
  • 1 tablespoon Worcestershire sauce

    • ½ cup chopped fresh flat-leaf parsley
    • ¾ cup fine fresh bread crumbs
    • 3 teaspoons vegetable oil

    • 2 celery ribs, cut into ¼-inch dice
    • 1 cup chopped onion
