  • Vegetable oil for frying
  • 1 cup all-purpose flour
  • 1 to 2 Tbs. milk, only if needed
  • ¼ cup granulated sugar
  • 2 cups fresh corn kernels or thawed frozen corn
  • 1 tsp. baking powder
  • 2 large eggs, lightly beaten
  • + 1 more ingredients
    • ½ tsp. kosher salt

In a food processor, process the corn kernels into a coarse purée; set aside. Sift the flour, sugar, baking powder, and salt into a bowl. Add the eggs and the corn purée; stir to combine well.
