  • 1 fresh fennel bulb
  • 2 celery
  • 4 tablespoons Tuscan-style extra-virgin olive oil
  • Freshly ground black pepper
  • 1 cup celery leaves
  • 2 Belgian endive
  • 2 tablespoons fresh lemon juice
