Ingredients

  • 1 cup(s) chopped mint
  • 0.5 cup(s) extra-virgin olive oil
  • 0.25 cup(s) plus 2 tablespoons fresh lime juice
  • 0.25 cup(s) plus 2 tablespoons buttermilk
  • 6 cup(s) fresh butter beans or three 10-ounce boxes frozen baby lima beans
  • Salt and freshly ground black pepper
