Butter Cookies

Ingredients
- 9-½ oz. (2 cups plus 1 Tbs.) unbleached all-purpose flour
- 8 oz. (1 cup) unsalted butter, softened
- 1-½ tsp. pure vanilla extract
- 1 large egg
- ½ tsp. table salt
- ¾ cup granulated sugar
Combine the flour and salt in a medium bowl. With an electric mixer, beat the butter and sugar until light and fluffy. Beat in the egg and vanilla. Beat in the flour mixture just until combined.
