Butter Fried Zucchini


  • salt and pepper to taste
  • ¾ cup margarine
  • 2 large zucchini, cut into ½ inch slices
  • 2 cups all-purpose flour
  • 2 eggs, beaten

1. Place the beaten eggs in a bowl. Place the flour on a dish. Dip the zucchini in the eggs, then dredge in the flour to coat. 2. Melt the margarine in a large skillet over medium heat. Fry the coated zucchini slices in the margarine until lightly browned. Season with salt and pepper.
