Butter Pecan Honey Caramel Cheesecake

Ingredients

  • 1 ½ pounds cream cheese, room temperature and cut into cubes
  • 1 Tbsp. vanilla
  • 3 large eggs
  • ¼ cup honey
  • ¼ cup brown sugar
  • ¼ cup sugar

    • 2 cans (13.4 oz. each) Dulce de Leche milk caramel (such as Nestle La Lechera brand)
    • 4 Tbsp. melted butter
    • 4 individual bars crunchy Oats and Honey flavored granola bars (such as Nature Valley brand)
    • 9 large honey graham crackers, finely crushed
    • 1 ½ cups pecan halves, divided
    • 4 Tbsp. butter, divided
