Butter-Rum Pudding


  • 1/8 teaspoon salt
  • 2 (12.3-ounce) packages reduced-fat extra-firm tofu, drained
  • 1 cup packed brown sugar
  • ½ cup water
  • 3 tablespoons butter
  • 2/3 cup spiced rum (such as Captain Morgan's) or white rum
  • 1 teaspoon vanilla extract

Combine the first 5 ingredients in a medium saucepan.
