Ingredients

  • 5 large egg whites
  • 1-¼ cups granulated sugar
  • ½ cup plus 2 Tbs. light corn syrup
  • 1 Tbs. vanilla extract
  • 1 lb., 4 oz. (2-½ cups) unsalted butter, at room temperature

Place the egg whites in the clean bowl of a stand mixer fitted with the whisk attachment and whisk on medium-high speed until foamy.
