Buttermilk Mashed Potatoes with Country Mustard

Ingredients

  • fresh parsley
  • 1 ½ cups buttermilk
  • ¾ cup unsalted butter
  • 2 tablespoons coarse-grained Dijon mustard
  • 4 pounds russet potatoes
