Buttermilk Panna Cotta with Berries and Vanilla Sabayon

Ingredients

  • kitchen blowtorch
  • 1 cup buttermilk
  • ¾ teaspoon powdered unflavored gelatin
  • 2 tablespoons sweet dessert wine, such as sauterne
  • 2 tablespoons sugar
  • 3 large egg yolks
  • ½ cup heavy cream
  • + 7 more ingredients
    • ½ cup mixed fresh berries such as blackberries, blueberries, and raspberries
    • 1 vanilla bean
    • ¼ cup sugar
    • 1 tablespoon orange liqueur such as Grand Marnier
    • ½ cup heavy cream
    • 4 4- to 6-ounce ramekins
    • ¼ cup fresh strawberries

In small bowl, sprinkle gelatin over 3 tablespoons water. Let stand until gelatin softens, about 1 minute. In heavy, medium saucepan over moderate heat, whisk together cream and sugar.
