Butternut Squash and Apple Bisque
Ingredients
- 1 tablespoon(s) butter
- 5 cup(s) butternut squash - peeled, seeded, cubed
- 1 carrot - large, peeled or unpeeled, cut into ¼ inch slices
- red bell pepper - chopped
- 2 stalk(s) celery - chopped
- 1 Granny Smith apple, peeled, cored, and chopped
- ½ teaspoon(s) ground allspice

- 28 ounce(s) vegetable broth
- 1 cup(s) apple juice or cider
- sour cream for garnish - optional
- 1 onion - chopped
- 2 tablespoon(s) olive oil
