Butternut Squash and Apple Bisque

Ingredients

  • 1 tablespoon(s) butter
  • 5 cup(s) butternut squash - peeled, seeded, cubed
  • 1 carrot - large, peeled or unpeeled, cut into ¼ inch slices
  • red bell pepper - chopped
  • 2 stalk(s) celery - chopped
  • 1 Granny Smith apple, peeled, cored, and chopped
  • ½ teaspoon(s) ground allspice

    • ¼ teaspoon(s) nutmeg
    • 28 ounce(s) vegetable broth
    • 1 cup(s) apple juice or cider
    • sour cream for garnish - optional
    • 1 onion - chopped
    • 2 tablespoon(s) olive oil
