Butternut Squash and Potato Mash with Thyme

  • 2 tablespoons orange juice
  • ¾ teaspoon freshly ground pepper
  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 2 teaspoons fresh thyme, chopped
  • 1 tablespoon plus 2 teaspoons sea salt, divided
  • 1 large butternut squash (about 2 pounds), halved lengthwise and seeded
  • ¼ cup sour cream

    • 4 tablespoons unsalted butter

1. Preheat oven to 400°. Place squash, cut side down, on rimmed baking sheet.
