Butternut Squash and Rice Timbales

Ingredients

  • 4 garlic cloves
  • 1 teaspoon fresh thyme
  • 2 tablespoons fresh parsley
  • 1 cup onion
  • 2 cups butternut squash
  • 3 cups broccoli florets
  • Nonstick vegetable oil spray

    • 2 ½ cups canned vegetable broth
    • 1 cup Arborio rice or medium-grain white rice
    • 2 tablespoons olive oil
    • 2 tablespoons oil-packed sun-dried tomatoes
    • 1/3 cup crumbled feta cheese
