Butternut Squash Gratin with Blue Cheese and Sage

Ingredients

  • 5 cups (3/4-inch) cubed peeled butternut squash (about 2 pounds)
  • 4 teaspoons olive oil, divided
  • 2 cups thinly sliced onion
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Cooking spray
  • 1 (1 1/2-ounce) slice white bread
  • + 2 more ingredients
    • ½ cup (2 ounces) crumbled blue cheese
    • 1 tablespoon chopped fresh sage

1. Preheat oven to 400°. 2. Steam butternut squash, covered, 10 minutes or until tender. 3. Place bread in a food processor, and pulse 12 times or until coarse crumbs measure 1/2 cup.
