Butternut Squash Kale Quiche in an Almond Flour Crust - Hungry Healthy Girl


  • For the quiche:
  • 3 large eggs, pasture raised and organic if possible
  • 10 oz. frozen organic kale or 1 box frozen spinach, thawed and wringed out firmly
  • ¾ cup mashed butternut squash, canned or fresh (sweet potato or kabocha squash would work too)
  • ½ teaspoon dried parsley leaves
  • For the crust:
  • 2 cups almond meal/flour
  • + 3 more ingredients
    • 2 tablespoons honey (or brown rice syrup or maple syrup)
    • 2 tablespoons coconut oil, melted (or olive oil)
    • ½ teaspoon salt

Preheat oven to 350 degrees and spray a 9-inch pie dish with an all-natural cooking spray. Combine all crust ingredients in a medium bowl. Mixture will be very crumbly and dry.
