Butternut Sweet Potato Soup


  • 1 stalk(s) celery, chopped
  • 2 sweet potatoes, peeled and diced
  • 1 butternut squash, peeled, seeded, and thinly sliced
  • 4 cup(s) vegetable stock (Imagine Soup) or water
  • ½ teaspoon(s) dried sage
  • black pepper
  • 1 onion, chopped
  • + 2 more ingredients
    • salt
    • 1 teaspoon(s) dried thyme

Sauté the onion and celery in a soup pot until softened, about 10 minutes. Add sweet potatoes, squash, vegetable stock or water, thyme and sage. Season with salt and pepper, cover and simmer. Puree the soup with an immersion blender or in a blender or food processor.
