Cactus, Chayote, and Green-Apple Salad

  • 5 tablespoons olive oil
  • 1 pound fresh nopales (prickly pear cactus paddles)
  • 4 navel oranges
  • 2 chayotes
  • ¼ teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/3 cup raw (green) hulled pumpkin seeds
  • + 4 more ingredients
    • 1 Granny Smith apple
    • 1/8 teaspoon freshly ground black pepper
    • 2 scallions
    • 3 tablespoons fresh lime juice

Put 1 cactus paddle, flat side down, on a work surface. Scrape horizontally from narrow base of paddle toward wider end with a vegetable peeler or knife to cut off thorns and brown spots.
