Ingredients

  • 1 teaspoon olive oil
  • 2 medium tomatoes, diced
  • ½ teaspoon ground cumin
  • 1 teaspoon sugar
  • ¼ teaspoon chipotle chile powder
  • ½ cup canned black beans, rinsed and drained
  • 2 ½ tablespoons fat-free sour cream

    • 3 tablespoons chopped green onions
    • 2 garlic cloves, minced
    • 6 cups shredded leaf lettuce
    • 1 tablespoon fresh lime juice
    • 3 tablespoons chopped fresh cilantro
    • 2 medium cactus pads (nopales)
    • 6 tablespoons crumbled queso fresco cheese
