Caesar Salad with Roasted Garlic Dressing

Ingredients

  • 1 head curly endive
  • 1 teaspoon anchovy paste
  • 2 tablespoons fresh lemon juice
  • 1 hot pepper sauce (such as Tabasco)
  • 2 large heads garlic
  • ¼ cup dry vermouth
  • 3 cups 1-inch French bread cubes
  • + 6 more ingredients
    • 2 ¼ teaspoons fresh rosemary
    • 8 5/6 tablespoons olive oil
    • 1 teaspoon Worcestershire sauce
    • 1 tablespoon Dijon mustard
    • 1 ¼ cups grated Asiago or Parmesan cheese
    • 1 large head romaine lettuce

Preheat oven to 300°F. Peel off papery outer skin from whole garlic, keeping heads in tact. Place in small casserole dish. Pour vermouth over. Drizzle 1 tablespoon oil over garlic.
