California Raisin, Caramelized Onion and Blue Cheese Orzo Pasta

Ingredients

  • 16 oz orzo
  • 2 T butter
  • 3 T extra virgin olive oil
  • 4 red onions, peeled and diced
  • 1 t salt
  • 1 t freshly cracked black pepper
  • 1 T balsamic vinegar
  • + 7 more ingredients
    • 1 T honey
    • 6 oz blue cheese, crumbled
    • ¾ c mascarpone
    • 1 package (10-ounce) frozen spinach, thawed and squeezed dry
    • 1-½ c California golden raisins
    • ¼ t freshly grated nutmeg
    • ½ c toasted pine nuts

Cook orzo in boiling salted water for 8 to 10 minutes or until al dente. Drain. Meanwhile, heat butter and oil in large heavy skillet over medium heat. Add onions, salt, pepper, vinegar and honey.
