Ingredients

  • 1 cup chopped celery
  • Remaining ingredients:
  • 1 cup dried black beans
  • Rice:
  • 1 ½ tablespoons minced seeded jalapeño pepper
  • ½ cup chopped red bell pepper
  • 1 ½ cups uncooked basmati rice
  • + 12 more ingredients
    • 1 ¼ cups chopped onion
    • ¼ cup minced fresh cilantro
    • 2 bay leaves
    • ½ cup chopped yellow bell pepper
    • 1 tablespoon olive oil
    • ½ teaspoon ground coriander
    • ¾ teaspoon black pepper
    • ½ teaspoon ground cumin
    • ¾ teaspoon salt
    • 4 garlic cloves, chopped
    • 3 ½ cups water
    • 2 cups diced pineapple

Sort and wash beans, and place in a medium saucepan. Cover with water to 2 inches above beans; bring to a boil, and cook for 2 minutes. Remove from heat; cover and let stand 1 hour.
