Cambodian-Style Fish Poached in Coconut Milk

Ingredients

  • 3 garlic cloves (peeled)
  • 1 red onion (small, roughly chopped)
  • 2 lemongrass (stalks trimmed and finely sliced)
  • 1 teaspoonturmeric (finely sliced or ½ teaspoon turmeric powder)
  • 2 tablespoonsfish sauce
  • 1 tablespoonbrown sugar
  • 400 gcoconut milk

    • 4 kaffir lime leaves
    • 450 gfish (firm, white fleshed cut into 2cm chunks)
    • 3 cmgalangal (fresh, peeled and roughly chopped)
    • 1 teaspoonpaprika
