Campfire Beer Pancakes

Ingredients

• Butter and maple syrup, for serving
• ¼ cup vegetable oil, plus more for cooking
• 2 large eggs
• 2 cups beer (any pale lager such as Corona, Budweiser, or Heineken)
• ½ cup currants
• ½ cup toasted pine nuts
