Ingredients

  • 2 cups minimarshmallows (optional)
  • 2 teaspoons apple juice
  • ¼ cup plus 2 tablespoons firmly packed light brown sugar
  • 4 tablespoons unsalted butter (½ stick)
  • 1 teaspoon whole cloves
  • 2 teaspoons kosher salt
  • 3 ½ pounds yams, as uniformly sized as possible

Heat oven to 350°F. Place yams in a large pot (they should fit in a single layer). Cover with cold water and add salt and cloves.
