Cantal Cheese Tart

Ingredients

• 3 large eggs
• 1 ¼ cups heavy whipping cream
• ½ cup shallots
• 1 tablespoon unsalted butter
• 3 tablespoons water
• 6 tablespoons unsalted butter
• ¹/₈ teaspoon (scant) freshly ground black pepper
• + 5 more ingredients

  • ¹/₈ teaspoon (scant) freshly grated nutmeg
  • 1 ¼ cups all-purpose flour
  • 2 cups coarsely grated rindless Cantal cheese
  • Pinch of salt

Blend flour and salt in processor 5 seconds. Add butter and cut in, using on/ off turns, until very coarse meal forms. Add 3 tablespoons ice water.
