  • 2 cups coarsely grated rindless Cantal cheese
  • 1 tablespoon unsalted butter
  • 1 ¼ cups all-purpose flour
  • 1/8 teaspoon (scant) freshly grated nutmeg
  • ¼ teaspoon salt
  • 3 tablespoons water
  • 3 large eggs
  • + 5 more ingredients
    • Pinch of salt
    • ½ cup shallots
    • 6 tablespoons unsalted butter
    • 1 ¼ cups heavy whipping cream
    • 1/8 teaspoon (scant) freshly ground black pepper

Blend flour and salt in processor 5 seconds. Add butter and cut in, using on/ off turns, until very coarse meal forms. Add 3 tablespoons ice water.
