Cappuccino Cheesecake Bars

Ingredients

  • 1 large egg
  • 2 8-ounce packages Philadelphia-brand cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon plus 1 cup chilled heavy whipping cream
  • 6 ½ teaspoons instant espresso powder, divided
  • ¼ cup (½ stick) chilled unsalted butter, diced
  • ¼ cup plus 2/3 cup sugar
