Caramel Nut Tartlets

Ingredients

  • Vegetable-oil cooking spray
  • ½ cup unsalted butter
  • 1 ¾ cups sugar
  • 1/3 cup sugar
  • 3 cups nuts (preferably a mixture of pecans, hazelnuts, and walnuts)
  • ½ cup water
  • 1 large egg yolk
  • + 6 more ingredients
    • ¾ cup heavy cream
    • 1 1/3 cups all-purpose flour
    • 1 teaspoon vanilla
    • 2 tablespoons light corn syrup
    • 2 teaspoons water
    • 1/8 teaspoon salt

Preheat oven to 325°F. and spray tartlet pans with cooking spray. In a small bowl whisk together yolk, water, and vanilla.
