Caramel Pear Pie Recipe

- 6 cups sliced peeled ripe pears (about 6 medium)
- 1 tablespoon lemon juice
- ½ cup plus 3 tablespoons sugar, divided
- 2 tablespoons quick-cooking tapioca
- ¾ teaspoon ground cinnamon
- ¼ teaspoon salt
