Ingredients

  • ½ teaspoon baking soda
  • ½ stick unsalted butter
  • ½ cup pecans
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • 1/3 cup heavy cream
  • 1 large egg
  • + 6 more ingredients
    • ¼ cup packed brown sugar
    • five-spice ice cream and poached tangerine slices
    • 1 ¼ cups all-purpose flour
    • 1 ½ cups water
    • 8 (6-ounces) ramekins
    • 2 cups sugar

Bring sugar and 1/2 cup water to a boil in a 12-inch heavy skillet over medium heat, stirring until sugar has dissolved, then wash down any sugar crystals on side of skillet with a pastry brush dipped in cold water.
