Ingredients

  • 8 large egg yolks
  • 6 tablespoons French roast coffee
  • Thin fresh pineapple triangles
  • 4 3-ounce packages soft ladyfingers (sponge-cake variety)
  • ¼ teaspoon salt
  • ½ vanilla bean
  • 3 tablespoons Cognac or other brandy

    • 6 tablespoons sugar

    • 4 large egg whites
    • 4 cups fresh pineapple
    • 2 8-ounce containers mascarpone cheese
    • ½ cup heavy whipping cream
    • 1/8 teaspoon salt
    • ¼ cup sugar

Place coffee filter in strainer set over medium bowl. Bring 1 1/2 cups water to boil in heavy medium saucepan. Mix in coffee and tea. Turn off heat; cover and let steep 5 minutes.
