Caramelized Onion & Thyme Tarts


  • 1 egg, lightly beaten
  • Kosher salt
  • 2 tsp. chopped fresh thyme
  • 3 medium yellow onions, very thinly sliced (about 4 cups)
  • 1 Tbs. unsalted butter
  • 1 Tbs. extra-virgin olive oil
  • 6 oz. (12 Tbs.) cold unsalted butter, cut into ½-inch pieces

    • 1-¼ tsp. kosher salt
    • 1 Tbs. granulated sugar
    • 9 oz. (2 cups) unbleached all-purpose flour
