Caramelized Onion-Potato Tart

Ingredients

  • 1 stick (1/2 cup) butter or margarine, divided
  • ¼ cup firmly packed brown sugar
  • 1 (24-ounce) package frozen potatoes with peppers and onions
  • 2 tablespoons dry sherry
  • 2 pounds sweet onions (about 6 small)
  • 7 tablespoons all-purpose flour, divided
  • ¼ teaspoon pepper
  • + 3 more ingredients
    • 2 large eggs, lightly beaten
    • 1 teaspoon salt
    • 1 ½ cups milk

Stir together potatoes, eggs, and 2 tablespoons flour; place in a lightly greased 10-inch tart pan. Bake at 400° for 30 minutes. Cut onions in half, and cut halves into slices.
