Caramelized Onion Tart with Whole Wheat Crust


  • 2 teaspoons coarsely chopped fresh thyme
  • 4 medium onions
  • 3 ounces creamy blue cheese
  • 1 stick plus 1 tablespoon cold unsalted butter
  • 1 1/2 cups whole wheat flour
  • 3 tablespoons extra-virgin olive oil
  • Freshly ground pepper
