Caramelized Pear Apple Onion Envelopes

Ingredients

  • 1 egg, beaten
  • 1 tablespoon(s) water
  • 2 Granny Smith apples, peeled, and cubed inch ¼ inch dice
  • 2 tablespoon(s) olive oil
  • 4 tablespoon(s) unsalted butter, divided
  • 2 sweet onions, such as Vidalia or Walla Walla (medium)
  • 2 ripe Pears, peeled and cubed inch ¼ inch dice

    • ½ cup(s) chopped walnuts, toasted
    • 4 ounce(s) blue cheese, crumbled (preferably Point Reyes -found at Whole Foods) or Goat Cheese
    • ¼ cup(s) balsamic vinegar
