Caramelized Pineapple Lassi


  • 5 (½-inch thick) fresh pineapple rings
  • 1 tablespoon coconut oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon light brown sugar
  • ¼ teaspoon salt
  • 1 (14-ounce) can light coconut milk
  • 8 ounces Greek yogurt
  • + 2 more ingredients
    • ¼ teaspoon ground cardamom
    • a pinch of cinnamon

Heat a large skillet over medium-high heat and add coconut oil and butter. Once melted, add in 4 pineapple rings and sprinkle brown sugar and salt over top.
