Caramelized Rice Pudding with Pears and Raisins

Ingredients

  • 1 cup Arborio rice or other short-grain rice
  • 3 tablespoons nonfat dry milk
  • 1 (3-inch) cinnamon stick
  • 1 (3-inch) cinnamon stick
  • ¼ cup apple juice
  • 1/8 teaspoon salt
  • 3 tablespoons granulated sugar
  • + 8 more ingredients
    • 3 ½ cups chopped peeled Bosc pears
    • 1 (3-inch) piece vanilla bean, split lengthwise

    • ½ cup granulated sugar
    • ¼ teaspoon ground nutmeg
    • 4 cups 2% reduced-fat milk
    • ½ cup raisins
    • ½ cup heavy cream

Preheat oven to 300°. Combine first 7 ingredients in a 3-quart casserole. Scrape seeds from vanilla bean; add seeds and bean to rice mixture.
