  • 2 cups heavy cream
  • 6 large Idaho potatoes, peeled and sliced thinly on a mandoline
  • 3 tablespoons finely chopped fresh sage leaves
  • Salt and freshly ground black pepper
  • 3 Vidalia (or other sweet variety) onion, peeled, halved and thinly sliced on a mandoline
  • 1 tablespoon unsalted butter
  • 2 tablespoons olive oil
