Ingredients

  • 6 cups (1 1/2 10-ounce packages) shredded carrots
  • 3 cups shredded purple cabbage (3/4 10-ounce package)
  • 2 tablespoons salted sunflower seed kernels

  • 1 Granny Smith apple
  • 2 tablespoons minced fresh mint or parsley leaves
  • ¼ teaspoon ground cumin

    • 3 tablespoons fresh lime (or lemon) juice
    • 3 tablespoons extra-virgin olive oil
    • 1 tablespoon finely minced shallot
    • 3 tablespoons fresh lime (or lemon) juice
    • ¼ teaspoon ground cumin
    • 2 tablespoons salted sunflower seed kernels
    • 1 Granny Smith apple
