Carrots with Raisins and Olives

Ingredients

  • 0.25 teaspoon(s) ground coriander
  • 0.25 cup(s) extra-virgin olive oil
  • 1 teaspoon(s) salt
  • 10 picholine olives
  • 1.5 pound(s) carrots
  • 0.3333 cup(s) golden raisins
  • 0.25 teaspoon(s) ground cumin
  • + 2 more ingredients
    • 0.25 cup(s) fresh lime juice
    • 0.5 teaspoon(s) freshly ground pepper

In a medium bowl, toss the carrots with the lime juice, olive oil, salt, pepper, cumin and coriander. Let the salad stand for 30 minutes, then stir in the raisins and olives and serve.
